Of all the Olive Garden copycat recipes, this one's got to be my favorite. If you like creamy pastas, you'll go crazy for Olive Garden's Chicken Alfredo. It's ultra rich and tastes just as good the next day, if not better. This Olive Garden recipe is incredibly easy to make, even for beginner cooks. It makes a great "throw-together" dish when you are short on time. Kids will gobble this pasta dish up and adults will be singing your praises for months! If you prefer, you can adjust the recipe to be less rich by leaving out the eggs yolks. Either way, this Italian restaurant dish will taste amazing. If you need a good weeknight dinner, this recipe is a great choice. It is quick and easy to make, but it will taste like you spent a much longer time preparing it.

NotesSubstitutions: You may omit the egg yolks from the recipe to make your dish less rich.

Ingredients

  • 1 pound fettuchine
  • 2 pounds chicken breast or strips
  • 2 tablespoons olive oil
  • 1/4 cup butter (1/2 stick)
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup white wine
  • 1 cup heavy cream
  • 3 egg yolks
  • 3/4 cup Parmesan cheese
  • 1/4 teaspoon dried parsley flakes
  • salt and pepper, to taste

Instructions

  1. Lightly season the chicken breasts with salt and pepper. Heat 2 tablespoons of olive oil in a skillet. Sautee the chicken breasts over medium heat until cooked through. Set aside the cooked chicken.

  2. In a heavy bottom saucepan, heat ¼ cup butter and add the chopped onion. Let the onion simmer for 2 minutes, then add the minced garlic. Let simmer one more minute.

  3. Add the wine and heat until the alcohol cooks off, about 2 minutes. Continue stirring throughout.

  4. Place egg yolks in a separate bowl and slowly whip in a portion of the hot cream mixture. Slowly add egg yolk mixture back into remaining cream mixture in the saucepan. Place the saucepan back on very low heat and stir until simmering. Add the Parmesan cheese and stir until thick, about 1 minute.

  5. Add the dried parsley flakes and season to taste with salt and black pepper. Serve over your favorite pasta.

With a family of 6 budget friendly is always very welcome indeed and this is an example of a really good budget friendly dish. Lovely flavors in this dish and I love the separated eggs aspect, a la carbonara. It is a really easy to make dish that the whole family will enjoy just like ours did.

This definitely sounds like a 5 dish to me, even though I haven't yet made it. It isn't nearly as offensive to the waistline as some of the other recipes which I've seen for Chicken Alfredo, so I'll definitely try this recipe very soon. If I eliminate the egg yolks, should I then substitute the equivalent amount of Egg Beaters?

This Olive Garden Chicken Alfredo is all I order when I go there. It is so good and creamy. Just right. I have never made homemade alfredo sauce myself but my son makes homemade sauce but it is a little to rich. This looks like a really easy recipe and I am going to try this for sure.
