I often make salsa in the summer time in big batches and preserve it. I always use fresh tomatoes in September and my recipe calls for cooking the salsa down. I'm eager to try this recipe since I bet it has a really fresh taste. I like the convenience of being able to use tinned tomatoes since I could mix up fresh salsa on a moments' notice. I wonder if anyone has tried making this in a bigger batch or canning it? Can't wait to try this one!
