Homemade Kheema Dosa
"For the last 20+ years, I have made my own dosa batter at home with a 3:1 ratio of Jasmine Rice: Urad Dal. I add a tablespoon of fenugreek seeds and let it all soak for about 8 hours before blending it. I use a Blend Tec, but you can use the blender you have on hand as long as it gets finely grounded. After blending, I use the Instant Pot to ferment the batter on yogurt mode which takes 8 hours to complete. I’ve preferred to make my own batter all these years and now even more so with organic ingredients, but Gits works well if you do not want to make your own batter. Add salt, sugar, and water to reach the consistency you like. Spread it onto a pan, add oil/butter, and then spread the kheemo + cilantro + cheese + onion + tomato + green chili. Let it cook, fold it up, and then enjoy with chutney and sambar!"
