Delish Sweet Potato Curry

Ingredients
- 24 ounces sweet potatoes potatoes
- 3 cloves garlic
- 1 tablespoon red chili powder
- 1 tablespoon cumin powder
- 1 teaspoon ground cardamom
- 1 teaspoon turmeric powder
- 1 ounce cilantro
- 3 tablespoons cooking oil
- 5 cups vegetable stock
- Salt and pepper
Instructions

Peel and dice cut the sweet potatoes.

Add oil in a heated pan and sauté minced garlic.

Stir in sweet potatoes and sauté for 2 minutes until colored.

Add in all spices and the vegetable stock.

Bring to a boil and simmer for 20 minutes. Stir occasionally.

Season with salt and pepper.

Add chopped cilantro.

Serve with freshly baked naan or piping hot rice.
