Corner Bakery Quinoa and Pico Salad
Quinoa is one of the healthiest grains you can eat and it also happens to be the most delicious. This Corner Bakery Quinoa and Pico Salad is a great salad recipe to enjoy for lunch or dinner. The quinoa is accompanied by Southwestern ingredients like black beans, corn, tomatoes, and cilantro. A little jalapeno gives the salad some nice heat that doesn't overwhelm you. Lime juice is added to heighten the flavors. This quinoa recipe is great on its own or as a side dish.
Ingredients
- 4 cups quinoa, cooked
- 3/4 cup black beans, canned
- 2 plum tomatoes, diced
- 1 cup corn (thawed or grilled, removed from the cob)
- 1 jalapeno, minced (remove seeds)
- 1/4 cup red onion, minced
- 2 tablespoons cilantro, chopped
- 2 limes, juiced
- 3 tablespoons olive oil
- salt, to taste
Instructions

Cook quinoa according to directions on the box.

Rinse black beans and mix with quinoa, tomatoes, corn, jalapeno, red onion, and cilantro.

In a separate bowl, whisk the lime juice, olive oil, and salt together and add to the quinoa mixture.
