Gazpacho is cold vegetable soup and it is a fantastic and flavorful way to incorporate more vegetables into your diet. The Pioneer Woman's Gazpacho Copycat recipe can be enjoyed year-round, but is especially cooling on warmer summer days. Don't knock it until you try it—although cold soup may be new to you, it's wonderfully refreshing. Half of the veggies are pureed for form a thick base for the soup, and half are finely chopped so that there is some texture and bite to this vegetable dish.

This is a great fresh way to enjoy and use up summer produce from the garden! And it looks like about one of the healthiest things you could eat. I always have a ton of tomatoes and zucchini all at once toward the end of summer, and we take advantage of it by making things like salsa, pasta sauces, and summer soups like this one. I throw in a hot pepper from my garden, depending on what is ready to pick that day, in place of the tobacco sauce. I don't understand why it says 30 minutes prep time, though. You can whip it together in a food processor in no time at all. you just have to let it chill after so the flavors can combine.
