Loaded Smashed Potatoes

Ingredients
- 1 pound yellow baby potatoes, washed
- 2 tablespoons olive oil, divided
- 1 tablespoon butter, melted
- Salt and pepper to taste
- 1 cup cheddar cheese, shredded
- 8 strips bacon, cooked to crisp and crumbled
- 2 tablespoons fresh chives, chopped

To make your loaded smashed potatoes, first start by preheating the oven to 450 degrees.

Fill a large pot with water and bring it to a rolling boil.

Carefully drop the potatoes into the boiling water and let boil for about 15-20 minutes or until tender.

While the potatoes boil, make sure your butter, cheese, bacon and chives are prepared and ready to go!

Prepare a sheet pan by brushing it with 1 tablespoon of the olive oil. Set aside.
