- 2 pounds frozen hash browns
- 1 (10.25-ounce) can cream of chicken soup
- 2 cups sour cream
- 1/2 cup melted butter
- 1/2 cup finely diced onion
- 1/2 cup finely diced red bell pepper (optional)
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups shredded cheddar cheese, divided

Instructions

Preheat oven to 350 degrees F. Spray a large, 4-quart, bake dish with cooking spray (see note).

In a large bowl, combine hash browns with soup, sour cream, butter, onion and red pepper. Season with salt and pepper and stir in 1 cup of the shredded cheese until well mixed.

Spoon into prepared bake dish and bake for 45 minutes. Sprinkle with the remaining 1 cup of cheese and continue to bake another 10 minutes until cheese is melted and lightly browned on top.
Notes
This makes a large quantity and is best if baked in a dish larger than a standard 9 x 13 casserole. You can measure your largest bake dish by pouring in water to see what quantity it holds. If you only have a 9x13, the finished casserole will be thicker and will need at least 10 more minutes of bake time before adding the final cheese.

I always love visiting my family in the South and stopping into Cracker Barrel. We don't have them where I live, so it's always a treat! Their hashbrowns have always been my favorite, so I am looking forward to making them at home!

I make this recipe every single time I have someone visiting from out of town. I toss it together before heading to bed, put it in the fridge. Once I'm up in the morning, it goes into the oven while the coffee brews. Perfect for getting all the sleepy heads out of the bed on a lazy weekend.

I used cream of mushroom soup instead (because that's what I had) and added crispy fried French's White Cheddar Onions as a topping. Not a red pepper fan, so I omitted those, but we can devour this instantly!!! Thanks!

I really enjoyed this casserole. I've never tried the Cracker Barrel dish it's based on, but I thought it was really great. The red peppers were a really nice touch. I could probably eat the whole casserole dish of this and be happy.

I prefer my potatoes a little crispier and less creamy, but that is just a personal preference. My family ate these up even though they weren't necessarily my favorite.
