I love finding these random vegetarian dishes. This one should be fairly simple and inexpensive for me to make. Avocados are a plenty here in Florida. Almost every yard has a tree, but by far the best are Haas and they are a little more rarer. I think the chips she used have been discontinued.

I love Chipotle, so I will need to try this recipe! I like that this recipe is so easy to make. I bet this would taste amazing on a taco salad, too.

My whole family loves Chipotles and I'd love to be able to make one of their bowls at home! This is so simple, yet I never would have thought to try making it at home! I also like that this lets me put less onion in, since we're not fans of onion. This would be great with nacho chips as a dip, or on top of baked nachos, enchiladas, or any mexican food. Yum!
