Mexican Quinoa Recipe
"An excellent one-pot meal, this yummy Mexican quinoa recipe is a hearty flavor-packed meal. A one-pan Mexican food idea that is light and a delicious meal for a busy weeknight. Quinoa is gluten-free and high in protein, and one of the few plant foods that contain sufficient amounts of all nine essential amino acids. Quinoa has a natural coating called saponin. This natural coating can make the cooked grain taste bitter or soapy. It’s easy to get rid of by rinsing the quinoa just before cooking. Other cookbooks suggest soaking it overnight to remove the bitterness."

Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic
- 1 jalapeno
- 1 cup quinoa
- 1 cup vegetable broth
- 15 ounces can black beans
- 15 ounces can fire-roasted diced tomatoes
- 1 cup corn kernels
- 1 teaspoon chili powder
- 1 teaspoon cumin
Instructions

Heat olive oil in a large skillet over medium-high heat.

Add minced garlic, minced jalapeno, and cook, stirring until fragrant.

Stir in quinoa, vegetable broth, drained beans, tomatoes, corn, chili powder, and cumin.

Bring to a boil and simmer for 20 minutes.

Season with salt and pepper.

Stir in avocado, lime juice, and chopped cilantro.
