For perfect poached meat, the meat should be fully submerged in the poaching liquid and the temperature should be low."
NotesYou can add herbs such as thyme and rosemary to the poaching liquid to create wonderful aromas. You can also add some tarragon and mustard to the sauce to give it a French flavor.

- 1 ounce large onion
- 3 ounces tomato
- 3 cans butter beans
- 3 pounds ham hocks
- 2 tablespoons fresh parsley
- Salt and pepper to taste

Dice the onions and tomatoes

Layer half of the onions, then beans, then ham hocks in the pressure cooker.
