Red Wine Rhubarb Cocktail
"A fabulous and easy recipe for a wine cocktail using the best red wines and cooked rhubarb. A rhubarb cocktail drink that will be a tremendous hit with your family for a lunch or dinner. This recipe takes humble rhubarb and turns it into a delicious cocktail mix. You can put some spices in this drink to add a more distinctive flavor. Star anise and cinnamon would be a perfect choice to add while cooking the rhubarb."

Ingredients
- 12 ounces Rhubarb
- 1 cup Water
- 1 cup Sugar
- 1 bottle red wine
Instructions

Place the rhubarb, water, and sugar in a medium saucepan over medium heat.

Stir periodically for 5 minutes until the rhubarb has broken down into a puree.

Place a strainer or sieve over a bowl and pour rhubarb mixture into the strainer.

With a spatula or pliable spoon, push the rhubarb through the strainer to release the juice.

Allow strained juice to cool.

Combine the Rhubarb juice with red wine and stir well.

Fill the glass with ice and pour the cocktail mix. Enjoy.
