Ingredients
- 4 cups cooked chicken breast, cut into 1/2-inch cubes
- 1 cup mayonnaise
- 1 cup diced celery
- 1 1/2 cup seedless purple grapes, cut in half
- 1 tablespoon chopped fresh parsley
- 1 teaspoon salt
- Fresh ground pepper to taste
- 1/3 cup whipping cream
- 1/2 cup sliced almonds

Instructions

In a large bowl, toss chicken, mayonnaise, celery, grapes and parsley together adding salt and pepper to taste.

Just before serving, whip cream to soft peaks and gently fold into the chicken mixture.

Toast almonds in a dry skillet until golden brown, and stir into the mixture, reserving a few for garnish.

Serve the salad in lettuce leaf cups or spooned into croissants to make sandwiches.

I made this yesterday, and was disappointed. It's not all that it's cracked up to be! I followed the recipe exactly as written, but found the chicken salad to lack flavor. In my humble opinion, the best tasting chicken salad is made with a mixture of white dark meat, not only the breast meat.

I love chicken salad and the suggestions here for its use are really very much welcome. I don't include grapes in chicken salad or sandwich but I'd like to try it next time esp when used as salad or dip for crackers . The celery is okay but the parsely has a certain flavor I'd rather use with soups. I don't mind using pecan nuts with this salad. I want this with lots of pepper, a bit sugar and ordinary mayo, not diet mayo. Thanks for this copycat recipe from Neiman Marcus.

I love a good chicken salad recipe, so of course I can't wait to try this spin on chicken salad either as a side dish or as a sandwich. I've really good things about the food at Neiman Marcus, so I have to assume this would be great!

I'm not a big fan of chicken salad, but I've heard the food at the Neiman Marcus restaurant is very tasty, so I would definitely be willing to give this recipe a try.

I make Chicken salad all the time I like the addition of the whipping cream but I just can't see using grapes and almonds BestIdeaEver My recipe calls for a mix of white and dark meat chicken celery radishes bell pepper onion and Miracle Whip I think whipped cream would make a great addition to my recipe but I can't use it because my husband has diabetes and heart problems so I don't use it in his food at all In fact for him I even leave out the radishes bell peppers and onion or else he will get sick I also use this recipe after I make a ham I will take and cut most of the ham off the bones and then will take and make sure to get the scraps of ham off the bones and make ham salad for sandwiches or for use on a bed of…Read More leaf lettuce

Personally, I love grapes and pecans in chicken salad, but I also like the lemon poppy seed chicken salad for a change, too. All that matters is that you like it! I use recipes as an inspirational tool and make changes as needed, although sometimes for a new recipe, I follow it exactly before I try anything dangerous! lol

It's the whipping cream that elevates this chicken salad! One tip is to pull off the tough outer strings on the celery before dicing.

It says to whip the whipping cream to soft peaks and fold it in at the last minute. I'll bet you could try a few other ways here. I'm going to try it for tomorrow...sounds so wonderful!

This is really good - the dressing so creamy! It's a decadent recipe, but I suppose if it's made with light mayo then you don't need to worry as much.

I have made this recipe for yrs and yrs. I always add walnuts to it too. Pecans work too. I make it with bow tie pasta too for a pasta salad, It has been a favorite salad of mine for yrs. I never had it at Neiman Marcus but have eaten it at Byerly's/Lund's in Minneapolis. Thats were I got hooked on it.
