I love this recipe for the Homemade Funfetti Mix cake. As a retired pastry chef, I prefer making mixes from scratch too. This recipe is so good, it's the same one I have been using for years. I use Crisco Shorting, in place of the butter for the perfectly white cake. The cake will come out light and fluffy if you whip your sugar and shortening until fluffy first before adding anything else. You can even fold in chocolate sprinkles into this this cake batter. So good. Oh also, if your butter cream frosting is to sweet, whip in 1/2 a teaspoon of lemon extract with the vanilla. It works to cut some of that sweetness.
