Instructions
-
Line your counter or baking sheet with parchment paper.
-
Melt the chocolate candy coating in the microwave according to the package directions. Once melted, stir in 3/4 teaspoon raspberry extract (see Notes).
-
Using a fork, dip crackers in the melted chocolate, allowing excess to drip off. Place on parchment paper. Continue until all of the melted chocolate has been used (see Notes).
-
Allow the chocolate to harden at room temperature or in the refrigerator. Store cookies in an airtight container in the refrigerator.
Notes
-
Our test kitchen yielded 30 cookies when making this recipe. More or less cookies may result depending on the thickness of the chocolate coating on each cracker.
-
More or less raspberry extract may be used according to your taste preference. If desired, begin by adding 1/2 teaspoon of extract. Taste test the chocolate on a spare cracker and add more extract in 1/8 to 1/4 teaspoon amounts until desired taste is achieved.
-
You may need to re-melt your chocolate candy coating in the microwave for 10 seconds at a time if it begins to harden as you are coating the crackers.
