Ingredients
- 8 ounces linguine pasta
- 3/4 cup flour
- 1/2 teaspoon ground black pepper
- 1 teaspoon salt
- 1 1/2 pound boneless, skinless chicken breasts
- 1/4 cup olive oil
- 4 tablespoons butter
- 1/4 cup onion, finely diced
- 2 tablespoons garlic, finely minced
- 1/4 teaspoon red pepper flakes
- 1 cup white wine
- 1/4 cup fresh lemon juice
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 green onions, finely chopped
- 2 Roma tomatoes, finely chopped
Instructions
-
Place a pot with 6 quarts water over high heat and bring to a rolling boil. Add a pinch of salt and the linguine and cook per package directions. Drain well, reserving 1 cup of the cooking water.
-
While pasta cooks, combine flour, pepper and salt in a plastic bag and shake to mix. Drop chicken into the bag and shake to coat each piece well.
-
Place oil into a 12-inch non-stick skillet over medium high heat. Shake chicken pieces to remove excess flour then saut until browned on both sides and cooked through, about 8 minutes (larger pieces will take longer). Remove chicken once it is thoroughly cooked and lower heat to medium. Add butter, onion and garlic to the skillet and cook, stirring until onions are cooked, about 2 minutes.
-
Scoop cup of the remaining flour mixture from the plastic bag and add to the skillet, cooking for 1 minute while whisking constantly. Add the red pepper flakes, wine and lemon juice and continue to whisk until thickened, then add cream and again cook, constantly whisking to form a thick sauce. Stir in parmesan cheese. Taste and add salt and pepper as needed. Stir in about half of the green onion and tomato, the drained pasta and add pasta cooking water as necessary if sauce needs to be thinned enough to coat the pasta evenly.
-
Place the cooked chicken into the skillet and continue to heat over medium until chicken is serving temperature. Garnish with remaining green onion and tomatoes before serving.
Notes
Chicken breasts come in all sizes! If yours are very large, cut in half horizontally and then crosswise to make approximately 4 ounce servings, or pound larger pieces so that all the pieces are the same thickness and will cook evenly.

There is a mistake in the recipe. It says to add a cup of flour to make the sauce. It should be like 2Tb of flour. I made it according to the recipe. It was disgusting. Please review adjust the recipe. Thanks!

This looks very yummy. I really like simple to make and quick and easy recipes that actually taste good and not like you just threw something together at the last minute. I like that the cheese and sauce form a crust over the chicken while it is cooking and wine always helps a dish. So you cant go wrong with that.

This is one of Olive Gardens most delicious chicken-based dishes and I am so happy to have found this copycat recipe for it. I love the thin crispy crust layer that the cheese makes onto the outside of the chicken. The addition of the wine adds a more sophisticated taste to this dish.

I'm giving this Olive Garden Copycat Chicken Parmesano Vino Blanco a five-star rating for its being a pasta recipe and for using healthy ingredients. But really it's for the pasta. I love pasta, I can eat it everyday. My family loves pasta, they can eat it everyday. I want to be generous with my parmesan cheese and olive oil even it these two items are very pricey in my country. What the heck! Let's go and cook this pasta recipe.

I usually enjoy very lemon-y food, but the lemon juice in this was a tad too much, even for me. I would definitely reduce the lemon next time I made this, so it doesn't overpower the other delicious flavors.

I would use 1/4 or even 1/8 of the lemon juice, but the other flavors were very good.

This had too much lemon flavor for me. I would reduce the amount next time or make something else.

Not a fan of this. I would have liked this recipe a lot more without all of the lemon juice. It made the pasta taste sour. I'd definitely try it again, but only with way less lemon juice.

I don't love lemon used in savory dishes, so next time I will use way less juice.

I think I would have preferred an angel hair pasta with this dish, but the chicken was delicious! I also prefer my foods a bit spicier, so I would add a bit more crushed red pepper next time. Otherwise, this recipe was tasty and easy to make-- I would call that a success!

Getting to the recipe for this dish was VERY frustrating. I had 6 windows open before I got to the recipe itself. Every time a window opened, it said click here to get to the recipe. PLEASE ..... IF you are going to post a arecipe from another site, make it only 1 and MAXIMUM 2 clicks to get the recipes. It's not helpful to those of us wanting to try something but have to spend 5 minutes trying to get there. I would very much like to Pin and share (on Facebook) this recipe with friends and family, but I won't put them through the same clicking process. I'll find another way to share it.
