Stir fry Breadbites
"When it comes to Bread we all stick with the idea of a sandwich or a toast. This recipe makes bread tastier and takes to a different level, different from the usual sandwich or toast. All you need are a few ingredients. This is easy to make and doesn't take much time to prepare and cook it. When I'm in a rush and have to make something quick this is what I prefer, often pack this for my hubby's lunch. This is also a great food for sacks; serves well with hot tea. This is just yum."
NotesIf one wants can add more veggies to this recipe or peanuts.
You can have it with a dipping sauce of your choice or simply dig in. It taste yum even without any extra sauce.

Ingredients
- 6 slices of bread cut into small cubes. remove the edges.
- 1 large onion sliced.
- 1 cup shredded Carrots.
- 2 tablespoons Olive Oil
- 1 teaspoon Dried basil
- 1 cup parsley finely chopped.
- 3 tablespoons Tomato ketchup
- 1 teaspoon low sodium soy sauce.
- 1 tablespoon sriracha sauce (optional)
- 1 tablespoon Honey or as needed.
Instruction

Set a medium sized frying pan /skillet to heat. keep the heat on medium to low.

While the pan is heating slice the onion. Do not fine slice the onion keep it little thick.

julienne cut the carrots and keep aside. Finely chop the parsley and keep aside.

Now cut the bread slices into small cubes. remove the edges.

Once the pan is heated add the oil and wait for the oil to heat. Once heated add the onions. Fry the onions for 3-4 mins after that add the carrots and cook for another 5-6 mins.Add some salt at this point.We do not want to over cook the onion and carrot, do not want it to be soft. kind of want to retain the crunchiness.

Once done add the dried basil and some of the parsley(keep aside some of the parsley for garnish).Fry this for another 2-3 mins.

Now add the sauces and little bit of water; cook the mixture for 1-2 mins and add the honey mix well. After this add the bread cubes and mix well. Mix till bread cubes are well coated with the sauce. once done turn off heat and serve. Garnish with parsley.
