Retro Tomato Parmesan
"I remember a similar recipe my mom used to make years ago. I always thought it looked so fancy and tasted so good. She said she got the recipe from a Weight Watchers meeting. Here is my version of that dish. I jazzed it up by adding the parmesan and mozzarella cheese and it's so delicious. My kids and husband love it as much as I do now. Give this easy-peasy recipe a try."

Baked Tomato Parmesan...what a great idea. My tomato plants are in full bloom, and I am always looking for recipes to use them up (I can only eat so many tomato and mayo sandwiches) This recipe is perfect, it is easy to make, full of flavor and great for lunch or brunch, or as a side dish at dinner. I like whipping up one for lunch in my toaster oven...easy peasy...pick a tomato...lunch is ready.
