These Taco Time Copycat Pumpkin Empanadas are such a fun and tasty treat. They are easy to make and the flavors are perfect for the Fall. I like the versatility of the recipe and the authors suggestions for other fillings. I have made these with Guava jelly inside and they were absolutely delicious. They are a great simple dessert to serve on game day.
