Corner Bakery Roast Beef and Goat Cheese on Potato Thyme Bread
This sandwich is the perfect both for the sophisticated diner and anyone who loves clean, simple and delicious flavors. When I first sampled this dish, I was enchanted by how well the goat cheese and balsamic complemented each other. This is a great option to make for lunch at the office or for dinner with friends. Ingredients
- Potato thyme bread
- 4 ounces roast beef, thinly sliced
- 1/2 ounce baby arugula
- 1 ounce balsamic onions (red roasted onions with balsamic vinegar, salt and pepper)
- 2 ounces goat cheese spread (1 cup mayonnaise, 1 cup goat cheese crumbles, 1 teaspoon ground black pepper)
- 4-5 slices Roma tomatoes
- 1/2 ounce white balsamic vinegar

Split bread in half lengthwise

Spread 1 ounce of goat cheese spread on bottom piece of bread

Stack baby arugula, roast beef, tomatoes and balsamic onions in this order

Drizzle with white balsamic vinegar
