Pork Dust is a new, innovative yet simple, alternative to bread crumbs. This meaty product has just two ingredients: ground pork rinds and salt. Pork rinds, a common snack and treat in many places, are ground into a fine crumb mixture. Upon first look, you would never know they were not bread crumbs because the texture is nearly identical.
What is so great about the pork dust is it is gluten-free and carb-free, yet it will work in a similar way as regular bread crumbs. We prepared meatballs using the Pork Dust as a binding agent instead of bread crumbs. The meatballs held their shape, just as a normal meatball would. The flavors where enhanced by the addition of pork rinds, though an unsuspecting eater would have no idea what the taste was coming from. I would not describe the taste as necessarily "porky", but it enriched the beef meatballs. The company has many suggestions for using the magical dust. You can use it to bread really anything. We think fried pork chops would be out-of-this-world with the addition of Pork Dust. Another great sounding use would be coating chicken in the dust for a "fried" texture. Macaroni and cheese would definitely benefit from the addition of these "bread crumbs".
For those adhering to a gluten-free diet or trying to cut down on carbs, this product is a lifesaver. The dust is an easy fix for most recipes calling on bread crumbs. A small sprinkle of the Pork Dust will transform your dish and take it to the next level.
