Creamy Greek-style Pea Soup

"Creamy Greek-Style Pea Soup: Peas are normally considered a side dish, but in here, it is the star of the dish. Serve with crusty bread and a bottle of white wine for a light lunch! All it takes are a few pantry staples and some patience to create this lovely and vibrant spring season starter. The secret to this rich-flavored vegetable dish is the hint of yogurt at the end. You can add a teaspoon of paprika or cumin to add a few more herbaceous notes and a smoky flavor. A few crispy bacon bits would be nice as well."

Ingredients

  • 2 tablespoon olive oil
  • 1 ounce onion
  • 4 clove garlic
  • 8 cup chicken stock
  • 2 cup green split peas
  • 1 cup fresh mint leaves
  • 1 cup fresh parsley leaves
  • 1 cup yogurt
  • 1 lemon juice

Instructions

  1. Heat oil in a large pot, sauté minced onions and garlic until fragrant.

  2. Add the peas and sauté for 2 minutes. Lightly season with salt and pepper.

  3. Add the stock and bring to a boil. Reduce to a simmer for about 20 minutes.

  4. Using a food processor or immersion blender, blend the peas.

  5. Add parsley and mint and blend again until smooth.

  6. Stir in lemon juice and bring to a simmer.

  7. Season with salt and pepper.

  8. And add the yogurt before serving.

  9. Serve with a crisp pierogi and light white wine.
