Olive Garden Zuppa Toscana Copycat Recipe
Olive Garden is known for its satisfying and well-priced menu, and now you can get that Olive Garden taste without going to the restaurant. With this Copycat Olive Garden Zuppa Toscana recipe you can enjoy your favorite Italian soup recipe in the comfort of your own home.
"Zuppa Toscana" simply means "Tuscan style soup" in Italian. Made with freshly grated Parmesan, Italian sausage, and chunks of russet potatoes, this Tuscan masterpiece is absolutely irresistible. This recipe is perfect for those cooler fall and winter nights or whenever that Olive Garden craving hits, but not matter what the time of year is, if you make this recipe for dinner, you can be sure it'll be a crowd pleaser.
Ingredients
- 5 slice of bacon, cooked and crumbled
- 1 tablespoon of olive oil
- 1 large chopped onion
- 3 clove of minced garlic
- 1 pound of sweet Italian sausage
- 6 cup of chicken broth
- 3 large russet potatoes, cubed
- 2 cup chopped kale
- 1/2 cup half and half
- 3/4 teaspoon pepper
- 3/4 teaspoon salt
- Grated Parmesan cheese for garnish
Instructions

Heat the olive oil in a Dutch oven over medium heat. Add onion and saut until tender. Then add garlic and saut for another minute.

Add sausage and cook until it is no longer pink. Drain off the fat from the sausage.

Wipe out the pan with a paper towel and add chicken broth.

Return the sausage to the pan along with the potatoes and half of the bacon. Cook over medium-high heat until boiling.

Reduce heat to medium-low and cook for 15 minutes, or until potatoes are tender. Season with salt and pepper to taste.

Add kale and half and half and heat through, about ten minutes.

Serve each bowl topped with freshly grated cheese and remaining bacon.
