How to Make Risotto

Ingredients
- 1/4 cup olive oil
- 1/2 cup finely chopped yellow onion
- 2 cup Arborio rice
- 1 cup white wine
- 5 cup chicken broth, more if needed
- 4 tablespoon butter
- 1/2 cup Parmesan cheese, shredded
- salt and pepper, to taste

Heat oil in a large pot over low to medium heat and add the chopped onions. Cook for 3 minutes or until the onions are soft.

Heat the chicken broth in a separate pot and keep hot.

Add the Arborio rice to the softened onions and stir for 2 minutes.

Add the white wine and cook to let the alcohol evaporate.

Add the hot broth, about 1/2 cup at a time, stirring frequently. After adding each cup of hot chicken broth, cook until the liquid is almost fully absorbed.

Continue to add chicken broth 1/2 cup at a time, until all of the broth has been used or you achieve the desired texture and rice is cooked through. Turn off the heat.

Add the butter and shredded Parmesan cheese. Add additional cheese or butter to your liking. Stir to combine with the risotto.

Transfer to a large bowl. Serve immediately.
