CopyCat BJ's Brewhouse Great White Pizza
"This recreation of the classic "Great White" deep dish pizza from BJ's Brewhouse is simple and delicious! To really get the full effect of this pizza we recommend making the dough and alfredo sauce from scratch, both of which take minimal effort and can be done at any level of cooking skill. For the cheese we went with a combination of mozzarella and gouda to obtain both melt and flavor. The toppings are also very straight forward. Tradition calls for grilled chicken breast, roasted tomatoes, mushrooms, and garlic. Finally to bring it home you should use a cast iron skillet."

Preparation Time1 hr
Cooking Time20 min
Cooking Vessel Size12 inch cast iron skillet
Ingredients
- 2 cup All purpose flour
- 1 packet Instant dry yeast
- 1 teaspoon Salt
- 1 teaspoon Sugar
- 1 tablespoon Olive oil
- 3/4 cup Warm water
- 1 cup Unsalted butter
- 1 pint Heavy cream
- 4 ounce Cream cheese
- 1 clove Minced garlic
-
For the pizza dough! combine flour, yeast, salt, and sugar in a kitchen mixer or large bowl. Stir briefly to combine.
-
Heat water in microwave or on stove top until it is slightly warm (do not boil! This will kill the yeast in the dough. The water should be warm not hot.)
-
Add warm water and olive oil to the dry ingredients and mix thoroughly until a smooth ball of dough forms. Add flower 1 teaspoon at a time if the dough is still too sticky.
-
Turn dough out onto a well floured surface and knee by hand for 10-15 minutes to work up an appetite (or if you have a dough hook for your mixer use that)
-
Place the dough in a lightly oiled bowl, cover and let rise for about an hour.
-
For the alfredo sauce! In a sauce pan over medium heat melt the butter then stir in the heavy cream and cream cheese.
