Slow Cooker Winter Vegan Chili
"Loaded with veggies and pumpkin and winter spices, smelling everything cooking together is one of the most rewarding things about this Slow Cooker Winter Vegan Chili. It sure makes you feel blessed to be in a warm place with comforting food. It's one of those recipes where you just need to set it aside in the slow cooker, and maybe make some cornbread in the meantime to enjoy with it. Also included is instructions on how to make pumpkin puree from scratch."
NotesIf you are also going to make the pumpkin puree from scratch, I highly recommend toasting the pumpkin seeds and using them as a garnish.
